Homemade Vegetable Pasta Sauce

While on our honey moon Josh and I went to a couple of different Italian restaurants and absolutely loved one particular one in Grand Cayman Islands called Casanova’s and we knew the main reason was because they were homemade home cooked meals!! And it’s not like the Italian meals you get from Carabba’s or Olive Garden it’s Italian food like a real Italian family would make. He told me it was the best spaghetti he had ever had and of course I took this as a challenge to make my own homemade pasta sauce and of course I wanted it to be the BEST sauce he had ever had. Now I’m not Italian and I’m sure it wasn’t as good as the sauce he had at Casanova, but I know he loved it and I want to share it with you all :) it’s very simple and you can make a bunch of it at a time and even jar it :)

 

What you will need:

Egg Plant

Mushrooms (the ones that are already sliced come in quite handy)

Canned diced tomatoes ( the medium sized one)

Half a white onion

Garlic

Salt

Pepper

Directions:

1. In a skillet add some olive oil and let heat on medium heat

2. Add in cut up egg plant, zucchini, onion, and mushrooms and sauté. Season with salt, pepper, and garlic to taste.

3. Once they are softened and mushrooms turn soft and a light grey color add in canned tomatoes

4. let simmer on medium heat for about half an hour. Stirring occassionally.

5. Once it gets to the consistency you like turn off and add to your favorite pasta or over chicken.

6. When done either jar or put in a container in fridge.

7. Enjoy!

See I told you it was simple and if there is any ingredients you don’t like you can cut them out. You can also make it thicker by adding some tomato paste to it.
