Healthy White Chicken Chili

Alright last night Tekoa and I decided to make a white chicken chili for our friends and family at the house. It was a whole new thing for us to make so we were pretty excited and had no idea where to start. I decided to google some recipes for it and found one that I liked, but I didn’t like everything that was in it to a tee so of course we had to make it our own. And now we want you to make it in your home and share with all your loved one! I promise you it will be a hit!

What you will need: 

Melinda and Tekoa’s White Bean Chicken Chili

2 – 16oz boxes organic, free range, low sodium Chicken Broth
2 White Onions, coarsely chopped
1 Green Bell Pepper, coarsely chopped
1 Red Bell Pepper, coarsely chopped
2 cans organic, no sodium added White Beans, Drained and rinsed.
2 cans no sodium added, diced Fire Roasted Tomatoes with Garlic
2 cooked, boneless, skinless Chicken Breasts, shredded (for a fast option, use a rotisserie chicken)
1/2 tsp Pink Himalayan Salt
1 tsp Ground Cumin
2 tsp Smoked Paprika

Additional Options:
1/2 cup low fat, shredded Colby Cheese
Dollop of fat free Sour Cream per bowl


1. Add all ingredients in pot and let simmer until veggies are soft!

2. Add your cheese and sour cream and enjoy!
